Mocha Chocolate Chip Banana Mini-Muffins!

These little guys don't look like much, but they are pretty yummy!  I had to freeze most of the batch because it made so many.  I might suggest using less chocolate chips, because they can be pretty sweet.  The original recipe can be found here (I heart allrecipes.com).
The recipe with my changes:
Ingredients:
¼ cup vegetable oil
1 cup applesauce (unsweetened)
½ cup white sugar
½ cup brown sugar
1 egg
3 ripe bananas
3 Tablespoons instant coffee dissolved in 2 Tablespoons water
1 teaspoon vanilla extract
1 ½ cups whole wheat flour
¾ cup white flour
¼ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup semisweet mini chocolate chips
2 teaspoons flaxseed

1.   1.  Preheat oven to 350 degrees.
2.   2.  Blend oil, applesauce, sugar, egg, bananas, dissolved coffee and vanilla in mixer for 2 minutes.  
       Add flour, salt, baking powder, baking soda and flaxseed and mix.  Add chocolate chips.  Spoon into   mini-muffin cups.
3.  3.  Bake for 15 minutes.  Cool on wire racks.
